“Gorgeous gorgeous girls love soup . . .” 

No but seriously, I love soup. I eat soup at every opportunity. It truly is my favorite food. I’m scared of how much I love soup. Sometimes I think if I don’t eat a bowl of soup ASAP, I’m going to die!

Anyways . . . Here is a delicious soup recipe that I created by combining simple, cheap ingredients and a blend of spices. Enjoy!

Coconut Curry Lentil Stew

4 large russet potatoes peeled and chopped

1 28oz. can of crushed tomatoes

2 13.5 oz. cans of coconut milk

1 15.5 can of garbanzo beans

¾ cup of lentils

½ of a finely diced yellow onion

3 cloves of chopped garlic

To taste: curry powder, paprika, salt, pepper, chili powder

In a large pot over medium heat, add a few dashes of olive oil. Then add the garlic and onion. Saute until fragrant then add spices and stir.

In a separate large pot over high heat, boil potatoes in salted water.

In the large pot with the garlic, onion, and spices add crushed tomatoes, coconut milk, garbanzo beans, and lentils. Cover with a lid and let cook for 35 minutes.

Add potatoes and cook for an additional 10 minutes.

Soup’s up.

Serves about 4, or a very hungry 2, AKA, me and my boyfriend.
